Best for this class:

Ice in the Ocean, Wadhams - good overview of sea ice, and short sections on oceanography and climate (chapters 1-4, 7-8 most relevant)

Ocean Circulation, open university - sections 5.5 and 6.3 has good easy to follow info on polar oceans

Arctic and Antarctic, Sugden - best overview of everything, and easy to understand, but not detailed

 

Other good overviews:

 

Thermodynamics of Atmospheres and Oceans, Curry and Webster - Good, short sections on sea ice in    chapter 10, and sections 5.6,5.7, sections 11.5-11.6 good for deep water formation

Descriptive Regional Oceanography, Tchernia - dated but most thorough overview of oceanography

The climate of the Arctic, Przyblak - general meteorology and climate of the arctic

Antarctic Meteorology and Climatology, King and Turner - a little technical
